Spicy Noodles (Bibim Guksu)

Cook Time: 30 Minutes

Ingredients:
Soba Noodles(메밀국수)* or Thin noodles(소면), cucumber, regular & purple cabbage,  boiled egg(option), kimchi(option) 
*Soba Noodles are fat- and cholesterol-free and are a good source of nutrients like manganese, lean protein, carbohydrates and thiamine. So, I prefer it than regular thing noddles.

Sauce: (10 servings)*
1 cup of sugar
1 cup of soy sauce
1 cup of vinegar
1 cup of onion puree
1/2 cup of sesame oil
1/2 cup of olive oil
1 Tbs Wasabe
1 Tbs chili powder
1 Tbs chili paste
1 Tbs minced garlic
1 Tbs sesame seed powder

*I make 10 servings of sauce and keep it refrigerated. It is really easy to make it when ever I feel like it:)




Direction: 
  1. Add about  7 oz (200 grams) of noodles into a pot of boiling water. Stir them with a spoon to prevent them from sticking together. Close the lid.
  2. A few minutes later, they’ll start boiling over. Open the lid and stir the noodles. Cook a few minutes more with the lid open until they are cooked well.
  3. When the noodles are cooked, rinse them in cold water with ice couple of times, strain them, and set aside. The noodles will expand and lose their chewiness as time passes, so the noodles should always be cooked last in this recipe, and then eat right away.
  4. Put each portion of noddles on a serving bowl and add the prepared vegetable and sauce on the top.
  5. Add boiled eggs and chopped kimch at last. (Option)

  6. NOW mix it well and EAT! YAMMY~~~!!
